I’ve already talked about my love for roasted winter vegetable combos, but one downside of the genre is that there’s not a lot of color. Winter veggies tend to come in comparatively muted tones, and roasting only makes things browner. So for Thanksgiving or other holiday meals where visual presentation is part of the fun, certain options are better than others. I would definitely recommend beets – get some inky red ones, and you’ll even get some color smudged on the other veggies. And why go for white cauliflower when you can get that beautiful green Romanesco? Also, think about contrasts. Orange carrots don’t look like much when mixed with potatoes and parsnips, but stand out a lot when paired with beets and Brussels sprouts.
