After patiently thinning my Nantes carrots for weeks, I finally harvested two carrots for real. The carrots apparently decided to fatten up all of a sudden:
The carrots didn’t get as long as I thought they would, but they were definitely girthy enough to qualify as mature. So now I have two dozen mature carrots waiting in the ground, ready to get pulled. As with so many veggies I’ve grown this year, I stupidly forgot to do succession planting, so everything’s ready all at once.
So what do I do with all the carrots? I loved making carrot soup this spring, but I’m kind of bored of it now. There must be other fun options for carrots out there. I suppose I could try making carrot cake. Anyone have any suggestions?
