Last night was not my finest hour. I was sleep deprived and tired after a long day at work, and then got caught in torrential rainstorm on my way home. So I was very grateful to have some salad greens from my garden already rinsed and ready in my fridge. I chopped up an apple, then threw in some walnuts and crumbled blue cheese (Keswick Creamery’s ‘Blue Suede Moo’, just about my favorite blue ever). I didn’t even bother making a vinaigrette, I just drizzled on some olive oil and vinegar.
True, I wouldn’t have said no to a huge plate of mac and cheese last night, but in the right circumstances a good salad can be all the comfort food I need.
