Those bird beans I posted yesterday caught the eye of a couple commenters. They really are pretty, aren’t they? I bought a bag of them, in part because the vendor posted a big sign with some instructions for how to cook them. Otherwise I wouldn’t have known what to do with these lovely beans.
The instructions looked simple enough. So I went home and shelled the beans, which were whiter than their shells but still speckled with red (like a bird egg – ohhh, now I get it).
Wine, salt, pepper, and two chopped Roma tomatoes from my garden went into a pot with the beans. Sadly, the beans lost their color in the cooking process, despite what the sign said. They were tasty, though not particularly unusual. They tasted more or less like any other white bean, though with a nice fresh taste and texture. A good compliment to two fresh ears of corn.



The beans do look like birds’ eggs before cooking. Glad you enjoyed eating them.
